There’s nothing yummier or better for getting you back on track with eating super healthy than turkey soup the day after Thanksgiving! The Best part is you can throw practically anything in there that you want and it will still be good! Here’s what went in my turkey soup pot today: the turkey, norther beans, chopped zucchini, spinach leaves, mushrooms, onion, spring onion, garlic, sage leaves, celery, sprig of thyme and carrots! Here’s the official recipe:
1 turkey carcass or 2 turkey drumsticks or wings or combo of pieces
2 cloves garlic
1 small onion diced
salt to taste
sage leaf (optional)
sprig thyme (optional)
White Norther Beans (optional)
Lots and lots of you favorite veggies!
put turkey parts in a big pot and cover with water
add all other ingredients except veggies
bring to boil and reduce heat and simmer uncovered for 2-3 hours or just leave on the stove all day and enjoy the beautiful aroma!
1/2 hour before serving take out the turkey parts and remove any meat left on the bone and throw back in the soup and then add any and all veggies that you like! Fresh is best but frozen and canned work too!
Right before serving remove 2 cups of the soup with the veggies and let cool a little and then put it in a blender and then put back in the soup pot (this step is optional but adds thickness to the soup and my kids can’t pick out the blended veggies cuz they can’t see them Enjoy!
