Got Beer?  Got chili?  Then you’ve got Beer Chili!  Chili is one of the all time perfect meals in a bowl!   It tastes so good on a chili day or night and if you make it right it can be packed full of protein, fiber, nutrients, vitamins, minerals, healthy fats and beer!  Beer?  Oh yeah!  Last night for the first time I added a little something special to my Chili and it was SUCH a hit and soooo yummy!  I can’t believe how much flavor a beer adds to it!  Don’t worry about the alchohol because you cook it for 30- 45 minutes and all the alcohol burns right off and all you are left with is a great addition to ANY chili recipe!  When it’s all finished, spruce up your bowl with some organic shredded cheese, a small dollop of Fage 2% yogurt (which tastes EXACTLY like sour cream and ups the protein) and crumble up 2 corn chips.  Another great thing about chili is you can make a double batch and eat it all week! Need a quick easy beer chili recipe?  Here’s the one I made last night (and had again for lunch today):

1 1/2 – 2 pounds of organic ground beef (this is what I used), or ground turkey breast or crumbled tofu (for my vegetarian friends)

1 green pepper finely chopped (you get some veggies in this way but nobody sees them)

1 small onion finely chopped

any chili kit like 2 Alarm Chili, or the ones you see in those cute little brown bags, or just one of those chili mix envelopes

1 -15 oz can of red kidney beans drained and rinsed (or black beans, pinto beans, or any beans you like or try a new one)

1- 8 0z can of tomato sauce

1 bottled beer of your choice

Saute onion and green pepper for 3 minutes and then add ground meat and brown then drain (  I do this in the bottom of the same pot I am going to cook the chili in so I have one less pan to clean)

add tomato sauce, beer and beans and the chili seasoning mix (if it comes with masa flour I leave that out cuz it gets plenty thick enough with out those extra non-nutritive calories)

bring to a boil, then reduce heat and let simmer for 30-45 minutes!

serve in bowls and top with 1 tbsp grated organic cheese, 2 crumbled corn chips, chopped onions , dollop of Fage’ 2% yogurt.
