Staying away from energy foods after 3pm on the BodyInstinct Program doesn’t have to be boring if you get creative! Check out these balsamic mozzarella tomatoes!!! I have these often for dinner! So easy and simple to make and yet so yummy and good for you!
BodyInstinct Balsamic Tomatoes!!
Super red ripe yummy tomato cut into slices
Part skim organic or hormone free Mozzarella cheese (the kind that comes in the container with water is the best however, I have used shredded mozzarella or even sliced up mozzarella cheese sticks in a pinch)
Fresh basil chopped
cold or expeller pressed olive oil
*Slice one tomato into thick slices.
*Place think slices of mozzarella on top (about 1/2 cup serving total)
*Drizzle with a teaspoon of the olive oil
*pour over a tablespoon of balsamic vinegar
*sprinkle chopped basil on top
*salt and pepper to taste
(optional: sprinkle sundried tomato pieces on top)
